When to Start Thawing a Turkey: Thanksgiving 2026 Dates for Canada and the US
A turkey needs about 24 hours in the fridge for every 4 to 5 pounds. The exact day to move it out of the freezer for Canadian Thanksgiving (12 Oct 2026) and US Thanksgiving (26 Nov 2026), plus the cold-water backup.

Almost every Thanksgiving turkey disaster starts days before anyone turns the oven on. The bird stays in the freezer one day too long, and on the morning of the meal it's still a block of ice in the middle.
The fix is simple, but it needs a date: the day you move the turkey from the freezer to the fridge. This guide gives you that date for Canadian Thanksgiving (Monday, 12 October 2026) and US Thanksgiving (Thursday, 26 November 2026), using the official food safety guidance from both countries.
How long does a turkey take to thaw in the fridge?
The fridge is the safest way to thaw a turkey, and both countries use nearly the same rule of thumb:
- US (CDC and USDA): allow about 24 hours for every 4 to 5 pounds of turkey, in a fridge at 40°F (4°C) or colder.
- Canada (Health Canada): allow 24 hours for every 2.5 kg (5 pounds) of bird.
Here is the USDA chart, with rough metric weights added:

Plan on the longer end of each range. Fridges vary, and a bird that's thawed a day early is much easier to deal with than one that's still frozen. In US guidance, a thawed turkey can stay in the fridge for 1 to 2 days before you cook it. Health Canada's advice is to cook meat as soon as it's defrosted, so in Canada aim for the thaw to finish close to cooking day.
Put the turkey, still in its wrapper, in a tray or dish on the bottom shelf, so raw juices can't drip onto anything else.
Canadian Thanksgiving 2026: when to move the turkey
Thanksgiving in Canada is Monday, 12 October 2026. Plenty of families eat on the Sunday or Saturday of the long weekend instead, so count back from the day you'll actually cook.

If you have a big bird and that date has already gone, don't panic. Move it to the fridge today, then use the cold-water method below to finish the job on the day before or the morning of cooking.
US Thanksgiving 2026: when to move the turkey
Thanksgiving in the US is Thursday, 26 November 2026.

For a bigger turkey, that means the thaw starts the weekend before Thanksgiving. That's exactly the kind of date that slips, because nothing else about that weekend feels like Thanksgiving yet. Running late? Thaw it in cold water
If the turkey is still frozen and you're short on time, cold water is the safe backup:
- Keep the turkey in a leak-proof wrapper or bag.
- Submerge it completely in cold tap water.
- Change the water every 30 minutes.
- Allow about 30 minutes per pound.
- Cook it straight away once it's thawed.

That's a lot of water changes, so a kitchen timer or a repeating phone timer set to 30 minutes is the practical tool here.
A microwave works for a smaller bird if it fits, but follow the manufacturer's instructions and cook it immediately afterwards.
What not to do
- Never thaw a turkey on the counter, in the garage or on the porch. CDC explains that bacteria multiply quickly between 40°F and 140°F. On the counter, the outside sits in that range for hours while the middle is still frozen.
- Don't refreeze a fully thawed turkey. Health Canada says you can only refreeze food that's partly defrosted and still has ice crystals on it.
- Don't guess when it's done. You can cook a turkey that's still frozen or partly frozen, but it takes longer, so check the temperature with a food thermometer. CDC says to cook every part to 165°F (74°C), checked in the thickest parts. Health Canada's figure for a whole bird is 82°C (180°F). Use the guidance for where you live.
A simple turkey reminder plan
Thawing goes wrong because the important step happens days early, when your mind is somewhere else. Five reminders take care of it:
